Air Fryer Andouille Sausage

Smoky, spicy andouille sausage crisps beautifully in the air fryer, perfect for jambalaya, gumbo or a Cajun rice bowl. The high heat caramelises the edges and deepens its bold, peppery flavour.

Ingredients

  • 500 g andouille sausage, sliced
  • 1 tsp oil (optional)
  • 1 pepper, sliced (optional)
  • 1 onion, sliced (optional)
  • 1 tsp Cajun seasoning (optional)
  • Cooked rice, to serve

Method

  1. 1Slice the andouille into 2 cm coins.
  2. 2Toss with a little oil and any peppers if using.
  3. 3Preheat the air fryer to 190°C/375°F.
  4. 4Spread in a single layer in the basket.
  5. 5Cook 8-10 minutes, tossing halfway, until browned and crisp at the edges.
  6. 6Confirm 71°C/160°F if raw, then serve over rice.
