Air Fryer Andouille Sausage

Smoky, spicy andouille sausage crisps beautifully in the air fryer, perfect for jambalaya, gumbo or a Cajun rice bowl. The high heat caramelises the edges and deepens its bold, peppery flavour.
Ingredients
- 500 g andouille sausage, sliced
- 1 tsp oil (optional)
- 1 pepper, sliced (optional)
- 1 onion, sliced (optional)
- 1 tsp Cajun seasoning (optional)
- Cooked rice, to serve
Method
- 1Slice the andouille into 2 cm coins.
- 2Toss with a little oil and any peppers if using.
- 3Preheat the air fryer to 190°C/375°F.
- 4Spread in a single layer in the basket.
- 5Cook 8-10 minutes, tossing halfway, until browned and crisp at the edges.
- 6Confirm 71°C/160°F if raw, then serve over rice.

- Slicing on a slight angle gives more surface to caramelise.
