Air Fryer Baklava

Crisp layers of filo pastry packed with spiced nuts and soaked in fragrant honey syrup, the beloved Middle Eastern sweet. The air fryer crisps the delicate layers evenly for that signature shatter and sticky, golden finish.

Ingredients

  • 10 sheets filo pastry
  • 120 g (1 cup) mixed walnuts and pistachios, chopped
  • 1 tsp ground cinnamon
  • 100 g (1/2 cup) melted butter
  • 120 g (1/3 cup) honey
  • 60 g (1/4 cup) caster sugar
  • 60 ml (1/4 cup) water
  • 1 tsp lemon juice

Method

  1. 1Mix the chopped nuts with cinnamon. Warm the honey, sugar, water and lemon juice to make a syrup, then cool.
  2. 2Brush a filo sheet with butter and layer up several sheets in a small air-fryer-safe tin, buttering each.
  3. 3Scatter over the nut mixture, then top with the remaining buttered filo sheets.
  4. 4Score the top into diamonds with a sharp knife.
  5. 5Preheat the air fryer to 160°C/320°F, then bake for 18-22 minutes until deep golden and crisp.
  6. 6Pour the cooled syrup over the hot baklava and leave to soak for at least 2 hours.
