Caramelised bananas in a buttery brown-sugar and cinnamon sauce, the classic New Orleans dessert made without the flambé. The air fryer melts the sugar into a glossy caramel that clings to soft, warm banana slices.

Ingredients

  • 4 firm bananas, halved lengthways
  • 60 g (1/4 cup) brown sugar
  • 40 g (3 tbsp) melted butter
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Vanilla ice cream, to serve

Method

  1. 1Mix the brown sugar, melted butter, cinnamon, vanilla and salt into a paste.
  2. 2Arrange the banana halves cut-side up in a greased air-fryer-safe dish.
  3. 3Spoon the caramel mixture over the bananas.
  4. 4Preheat the air fryer to 190°C/375°F, then cook for 6-8 minutes until bubbling and caramelised.
  5. 5Toss gently halfway to coat the bananas in the sauce.
  6. 6Serve warm over vanilla ice cream, spooning the sauce on top.

Tips for the best results

  • Use bananas that are ripe but still firm so they hold their shape.
  • A splash of dark rum stirred into the sauce adds authentic flavour.
