Caramelised bananas in a buttery brown-sugar and cinnamon sauce, the classic New Orleans dessert made without the flambé. The air fryer melts the sugar into a glossy caramel that clings to soft, warm banana slices.
Ingredients
- 4 firm bananas, halved lengthways
- 60 g (1/4 cup) brown sugar
- 40 g (3 tbsp) melted butter
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- Vanilla ice cream, to serve
Method
- 1Mix the brown sugar, melted butter, cinnamon, vanilla and salt into a paste.
- 2Arrange the banana halves cut-side up in a greased air-fryer-safe dish.
- 3Spoon the caramel mixture over the bananas.
- 4Preheat the air fryer to 190°C/375°F, then cook for 6-8 minutes until bubbling and caramelised.
- 5Toss gently halfway to coat the bananas in the sauce.
- 6Serve warm over vanilla ice cream, spooning the sauce on top.
Tips for the best results
- Use bananas that are ripe but still firm so they hold their shape.
- A splash of dark rum stirred into the sauce adds authentic flavour.
