Shredded young jackfruit tossed in smoky barbecue sauce and crisped in the air fryer for a pulled-pork-style texture. The dry heat firms the strands and caramelises the sauce, making an unbeatable filling for buns and tacos.
Ingredients
- 2 tins (400g each) young green jackfruit, drained
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp ground cumin
- 150ml barbecue sauce
- Salt and pepper
- Burger buns, to serve
Method
- 1Drain the jackfruit and shred it with two forks, discarding tough cores.
- 2Toss with oil, paprika, garlic powder, cumin and seasoning.
- 3Preheat the air fryer to 190°C (375°F).
- 4Air fry for 10 minutes, tossing halfway, until the strands dry and crisp.
- 5Stir through the barbecue sauce and air fry 5-10 minutes more until sticky.
- 6Pile into buns with slaw.
