Shredded young jackfruit tossed in smoky barbecue sauce and crisped in the air fryer for a pulled-pork-style texture. The dry heat firms the strands and caramelises the sauce, making an unbeatable filling for buns and tacos.

Ingredients

  • 2 tins (400g each) young green jackfruit, drained
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 150ml barbecue sauce
  • Salt and pepper
  • Burger buns, to serve

Method

  1. 1Drain the jackfruit and shred it with two forks, discarding tough cores.
  2. 2Toss with oil, paprika, garlic powder, cumin and seasoning.
  3. 3Preheat the air fryer to 190°C (375°F).
  4. 4Air fry for 10 minutes, tossing halfway, until the strands dry and crisp.
  5. 5Stir through the barbecue sauce and air fry 5-10 minutes more until sticky.
