Air Fryer Beef Brisket

A spice-rubbed brisket takes on a smoky bark and tender pull in the air fryer when cooked low and wrapped. It is a compact way to get barbecue-style beef indoors, ready to slice or shred for sandwiches and tacos.
Ingredients
- 1.3 kg beef brisket
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp mustard powder
Method
- 1Combine the sugar, paprika, salt, pepper, garlic, onion and mustard powders into a rub.
- 2Massage the rub all over the brisket and leave for at least 1 hour.
- 3Preheat the air fryer to 160°C (320°F) for 4 minutes.
- 4Cook fat-side up for 25 minutes, then wrap tightly in foil and cook a further 20-35 minutes.
- 5Continue until the internal temperature reaches at least 71°C (160°F) and it feels tender.
- 6Rest, still wrapped, for 15 minutes before slicing thinly against the grain.
Tips for the best results
- Wrapping in foil partway through keeps the brisket moist and speeds up the tender stage.
- For pull-apart texture aim higher, around 90°C internally, cooking longer in the foil wrap.
