Air Fryer Beef Satay

Tender strips of marinated beef threaded onto skewers cook fast in the air fryer, ready to dip in a rich peanut sauce. The turmeric and lemongrass marinade gives fragrant, charred satay that makes a moreish starter or light meal.
Ingredients
- 500 g sirloin, sliced into strips
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp ground turmeric
- 1 lemongrass stalk, finely minced
- 2 garlic cloves, minced
- 1 tbsp vegetable oil
- 4 tbsp peanut sauce, to serve
Method
- 1Combine the soy, sugar, turmeric, lemongrass, garlic and oil into a marinade.
- 2Toss the beef strips through and leave for at least 30 minutes.
- 3Thread the beef onto soaked skewers in a loose ribbon shape.
- 4Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 5Cook for 8-12 minutes, flipping halfway, to 63°C (145°F).
- 6Serve hot with warm peanut sauce for dipping.
Tips for the best results
- Threading the beef in loose folds lets the hot air reach more surface for better charring.
- Loosen the peanut sauce with a splash of warm water if it is too thick to dip.
