Air Fryer Beef Satay

Tender strips of marinated beef threaded onto skewers cook fast in the air fryer, ready to dip in a rich peanut sauce. The turmeric and lemongrass marinade gives fragrant, charred satay that makes a moreish starter or light meal.

Ingredients

  • 500 g sirloin, sliced into strips
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp ground turmeric
  • 1 lemongrass stalk, finely minced
  • 2 garlic cloves, minced
  • 1 tbsp vegetable oil
  • 4 tbsp peanut sauce, to serve

Method

  1. 1Combine the soy, sugar, turmeric, lemongrass, garlic and oil into a marinade.
  2. 2Toss the beef strips through and leave for at least 30 minutes.
  3. 3Thread the beef onto soaked skewers in a loose ribbon shape.
  4. 4Preheat the air fryer to 200°C (400°F) for 3 minutes.
  5. 5Cook for 8-12 minutes, flipping halfway, to 63°C (145°F).
  6. 6Serve hot with warm peanut sauce for dipping.

Tips for the best results

  • Threading the beef in loose folds lets the hot air reach more surface for better charring.
  • Loosen the peanut sauce with a splash of warm water if it is too thick to dip.
