Air Fryer Beef Shawarma

Aromatic beef shawarma, marinated in warm spices and crisped at the edges, is easy in the air fryer. The strips char just like the rotisserie version, ready to wrap in flatbread with garlic sauce, salad and pickles.
Ingredients
- 600 g beef strips
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- ½ tsp cinnamon
- ½ tsp turmeric
Method
- 1Whisk the oil, lemon juice and all the spices with a good pinch of salt.
- 2Coat the beef strips and marinate for at least 1 hour.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Spread the beef in the basket and cook for 12-16 minutes, tossing halfway.
- 5Cook until charred at the edges and the beef reaches 71°C (160°F).
- 6Pile into warm flatbreads with garlic sauce, salad and pickles.
Tips for the best results
- Marinating overnight deepens the spice flavour and tenderises the beef.
- Spread the strips out so the edges catch and crisp rather than steam.
