Air Fryer Beef Stir Fry

A quick beef stir fry with crunchy vegetables and a savoury sauce works surprisingly well in the air fryer. The high heat gives the beef a nice sear and keeps the veg crisp, all without a wok or constant stirring.
Ingredients
- 450 g sirloin, thinly sliced
- 1 red pepper, sliced
- 150 g mangetout
- 1 carrot, julienned
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 2 garlic cloves, minced
Method
- 1Toss the beef with half the soy sauce and the garlic and leave for 10 minutes.
- 2Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 3Add the beef and cook for 5 minutes, tossing once.
- 4Add the peppers, mangetout and carrot with the sesame oil and cook a further 5-9 minutes, tossing halfway.
- 5Check the beef has reached 71°C (160°F), then drizzle over the remaining soy and oyster sauce.
- 6Toss everything together and serve over rice or noodles.
Tips for the best results
- Cut all the vegetables to a similar thickness so they finish cooking together.
- Add the sauce right at the end so it glazes rather than burns off.
