Individual beef Wellingtons feel utterly special, with tender fillet wrapped in mushroom duxelles and golden puff pastry. The air fryer crisps the pastry evenly while keeping the beef pink, making this showstopper surprisingly achievable at home.
Ingredients
- 2 thick beef fillet steaks, about 180 g each
- 250 g mushrooms, very finely chopped
- 2 garlic cloves, minced
- 1 tbsp Dijon mustard
- 6 slices prosciutto
- 320 g puff pastry
- 1 egg, beaten
- 1 tbsp olive oil
Method
- 1Sear the seasoned fillets in a hot pan for 1 minute each side, then brush with mustard and cool.
- 2Cook the mushrooms and garlic in a dry pan until all moisture evaporates to make a duxelles.
- 3Lay prosciutto out, spread with the mushroom mixture, wrap around each fillet, then encase in pastry.
- 4Brush all over with beaten egg and chill for 15 minutes.
- 5Preheat the air fryer to 190°C (375°F) for 4 minutes, then cook for 25-32 minutes until golden and 63°C (145°F) inside.
- 6Rest for 8 minutes before serving so the pastry sets and the juices settle.

- Cooking the mushrooms until completely dry is vital, or the pastry will turn soggy.
- Chilling the wrapped Wellingtons before cooking helps the pastry hold its shape and puff.
