Chewy, buttery blondies with deep caramel notes and pockets of white chocolate, baked in the air fryer for gooey centres and crisp edges. They come together in one bowl and are far quicker than firing up the oven.
Ingredients
- 115 g (1/2 cup) melted butter
- 150 g (3/4 cup) light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 130 g (1 cup) plain flour
- 1/4 tsp salt
- 75 g (1/2 cup) white chocolate chips
- 50 g (1/3 cup) chopped pecans, optional
Method
- 1Whisk the melted butter and brown sugar until smooth and glossy.
- 2Beat in the egg and vanilla, then fold in the flour and salt until just combined.
- 3Stir through the white chocolate chips and pecans.
- 4Spread into a greased, lined air-fryer-safe tin.
- 5Preheat the air fryer to 160°C/320°F, then bake for 15-18 minutes until the top is set but the centre is still soft.
- 6Cool completely in the tin before cutting into squares.
