Air Fryer Breakfast Flatbread

A crisp flatbread base topped with cream cheese, egg, spinach and bacon, like an open breakfast tart. The air fryer crisps the base and sets the egg for a quick, savoury morning bite.

Ingredients

  • 1 flatbread or naan
  • 3 tbsp cream cheese
  • 2 eggs
  • 40 g spinach
  • 2 rashers bacon, chopped
  • 40 g grated cheese
  • 1 tsp oil
  • Salt and pepper

Method

  1. 1Preheat the air fryer to 185°C/365°F.
  2. 2Spread the cream cheese over the flatbread and scatter with spinach and bacon.
  3. 3Cook for 4 minutes to crisp the base.
  4. 4Make two wells, crack in the eggs and add the grated cheese.
  5. 5Cook for a further 4-7 minutes until the eggs set and reach 71°C/160°F.
  6. 6Season and slice to serve.

Tips for the best results

  • Pre-crisp the base so it does not go soggy under the egg.
  • Pre-cook the bacon a little for extra crunch.
