Air Fryer Breakfast Hash

A loaded hash of crispy potatoes, sausage, peppers and onion topped with a baked egg. The air fryer crisps everything together for a hearty one-basket brunch.

Ingredients

  • 500 g potatoes, diced
  • 200 g sausage, sliced
  • 1 pepper, diced
  • 1 onion, diced
  • 2 tbsp oil
  • 1 tsp paprika
  • 2 eggs
  • Salt and pepper

Method

  1. 1Toss the potatoes, sausage, pepper and onion with oil and paprika.
  2. 2Preheat the air fryer to 200°C/400°F.
  3. 3Cook for 10 minutes, then shake.
  4. 4Cook a further 6 minutes, then make two wells and crack in the eggs.
  5. 5Cook for 4-6 minutes more until the potatoes are crisp and eggs set to 71°C/160°F.
  6. 6Season and serve straight from the basket.

Tips for the best results

  • Cut the potatoes small so they crisp in the same time as the veg.
  • Add the eggs near the end so the yolks stay soft.
