Air Fryer Breakfast Hash

A loaded hash of crispy potatoes, sausage, peppers and onion topped with a baked egg. The air fryer crisps everything together for a hearty one-basket brunch.
Ingredients
- 500 g potatoes, diced
- 200 g sausage, sliced
- 1 pepper, diced
- 1 onion, diced
- 2 tbsp oil
- 1 tsp paprika
- 2 eggs
- Salt and pepper
Method
- 1Toss the potatoes, sausage, pepper and onion with oil and paprika.
- 2Preheat the air fryer to 200°C/400°F.
- 3Cook for 10 minutes, then shake.
- 4Cook a further 6 minutes, then make two wells and crack in the eggs.
- 5Cook for 4-6 minutes more until the potatoes are crisp and eggs set to 71°C/160°F.
- 6Season and serve straight from the basket.
Tips for the best results
- Cut the potatoes small so they crisp in the same time as the veg.
- Add the eggs near the end so the yolks stay soft.
