Air Fryer Carrot Cake

A moist, spiced carrot cake studded with sweet carrot and warm cinnamon, finished with a tangy cream cheese frosting. The air fryer bakes it evenly with a lovely tender crumb, no big oven required.
Ingredients
- 180 g (1 1/3 cups) plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 2 tsp ground cinnamon
- 150 g (3/4 cup) brown sugar
- 2 eggs
- 100 ml (1/2 cup) vegetable oil
- 200 g (2 cups) grated carrot
- 150 g (5 oz) cream cheese and 50 g icing sugar, for frosting
Method
- 1Whisk the flour, baking powder, bicarbonate and cinnamon together.
- 2Beat the sugar, eggs and oil until combined, then fold in the grated carrot.
- 3Stir in the dry ingredients until just mixed.
- 4Pour into a greased, lined tin that fits your air fryer.
- 5Preheat the air fryer to 160°C/320°F, then bake for 28-33 minutes until a skewer comes out clean.
- 6Cool completely, then beat the cream cheese and icing sugar and spread over the top.
Tips for the best results
- Squeeze excess moisture from the carrot so the cake is not soggy.
- Add chopped walnuts or sultanas for a more traditional texture.
