Air Fryer Chicken Lollipops

Frenched drumsticks shaped into lollipops and coated in a sticky, spicy Indo-Chinese glaze. The air fryer crisps them up beautifully while the tangy sauce clings to every bite, a showstopping party appetiser.
Ingredients
- 10 chicken drumsticks, frenched into lollipops
- 3 tbsp cornflour
- 2 tbsp soy sauce
- 2 tbsp sweet chilli sauce
- 1 tbsp tomato ketchup
- 1 tbsp sriracha
- 2 cloves garlic, minced
- 1 tsp grated ginger
- Oil spray
Method
- 1Toss the lollipops with cornflour, half the soy and half the garlic.
- 2Preheat the air fryer to 190°C (375°F) and spray with oil.
- 3Cook for 18-22 minutes, flipping halfway, until crisp.
- 4Simmer the remaining soy, sweet chilli, ketchup, sriracha, garlic and ginger into a glaze.
- 5Check the chicken reaches 74°C (165°F), then toss in the glaze.
- 6Garnish with spring onion and sesame seeds.
Tips for the best results
- Ask your butcher to french the drumsticks to save time.
- Toss in the glaze at the end so they stay crisp.
