Air Fryer Chicken Satay

Golden coconut-marinated chicken skewers with a rich peanut sauce for dipping. The air fryer caramelises the edges just like a grill, delivering that authentic satay flavour in minutes for a crowd-pleasing starter or main.
Ingredients
- 600 g chicken thigh, sliced into strips
- 150 ml coconut milk
- 1 tbsp soy sauce
- 1 tbsp curry powder
- 1 tsp turmeric
- 2 tsp brown sugar
- 4 tbsp peanut butter
- 1 tbsp sweet chilli sauce
- Juice of 1 lime
Method
- 1Mix the coconut milk, soy, curry powder, turmeric and 1 tsp sugar, then marinate the chicken for 20 minutes.
- 2Thread the strips onto soaked skewers.
- 3Preheat the air fryer to 200°C (400°F).
- 4Cook for 10-12 minutes, flipping halfway, until charred at the edges.
- 5Meanwhile whisk the peanut butter, chilli sauce, lime and remaining sugar with a splash of water for the sauce.
- 6Check the chicken reaches 74°C (165°F) and serve with the peanut sauce.
Tips for the best results
- Thigh meat stays juicier than breast for satay.
- Loosen the peanut sauce with warm water until it is drizzle-able.
