One giant, gooey chocolate chip cookie baked in a skillet, crisp at the edges and molten in the middle. The air fryer nails that half-baked centre, ideal served warm with a scoop of vanilla ice cream to share.

Ingredients

  • 115 g (1/2 cup) melted butter
  • 100 g (1/2 cup) brown sugar
  • 50 g (1/4 cup) caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 160 g (1 1/4 cups) plain flour
  • 1/2 tsp bicarbonate of soda
  • 120 g (3/4 cup) chocolate chips

Method

  1. 1Whisk the melted butter with both sugars until smooth.
  2. 2Beat in the egg and vanilla, then fold in the flour and bicarbonate.
  3. 3Stir through most of the chocolate chips.
  4. 4Press the dough into a greased air-fryer-safe skillet or tin and scatter the remaining chips on top.
  5. 5Preheat the air fryer to 160°C/320°F, then bake for 14-17 minutes until golden at the edges but still soft in the middle.
  6. 6Rest for 5 minutes, then serve warm straight from the skillet with ice cream.
