One giant, gooey chocolate chip cookie baked in a skillet, crisp at the edges and molten in the middle. The air fryer nails that half-baked centre, ideal served warm with a scoop of vanilla ice cream to share.
Ingredients
- 115 g (1/2 cup) melted butter
- 100 g (1/2 cup) brown sugar
- 50 g (1/4 cup) caster sugar
- 1 egg
- 1 tsp vanilla extract
- 160 g (1 1/4 cups) plain flour
- 1/2 tsp bicarbonate of soda
- 120 g (3/4 cup) chocolate chips
Method
- 1Whisk the melted butter with both sugars until smooth.
- 2Beat in the egg and vanilla, then fold in the flour and bicarbonate.
- 3Stir through most of the chocolate chips.
- 4Press the dough into a greased air-fryer-safe skillet or tin and scatter the remaining chips on top.
- 5Preheat the air fryer to 160°C/320°F, then bake for 14-17 minutes until golden at the edges but still soft in the middle.
- 6Rest for 5 minutes, then serve warm straight from the skillet with ice cream.
