A dramatic, puffed-up German pancake with crisp golden edges and a custardy centre. The intense circulating heat of the air fryer helps it billow up beautifully, ready for lemon and sugar.

Ingredients

  • 2 eggs
  • 60 g plain flour
  • 80 ml milk
  • 1 tbsp sugar
  • 1/2 tsp vanilla
  • Pinch of salt
  • 20 g butter
  • Lemon and icing sugar to serve

Method

  1. 1Blend the eggs, flour, milk, sugar, vanilla and salt into a smooth batter.
  2. 2Preheat the air fryer to 190°C/375°F with a heatproof tin inside.
  3. 3Add the butter to the hot tin and swirl to melt.
  4. 4Pour in the batter and cook for 12-15 minutes until puffed and golden.
  5. 5Do not open the basket early or it may deflate.
  6. 6Serve at once with lemon and icing sugar.

  • A hot tin and hot butter give the biggest rise.
  • Serve immediately, as it settles quickly once out.
