A dramatic, puffed-up German pancake with crisp golden edges and a custardy centre. The intense circulating heat of the air fryer helps it billow up beautifully, ready for lemon and sugar.
Ingredients
- 2 eggs
- 60 g plain flour
- 80 ml milk
- 1 tbsp sugar
- 1/2 tsp vanilla
- Pinch of salt
- 20 g butter
- Lemon and icing sugar to serve
Method
- 1Blend the eggs, flour, milk, sugar, vanilla and salt into a smooth batter.
- 2Preheat the air fryer to 190°C/375°F with a heatproof tin inside.
- 3Add the butter to the hot tin and swirl to melt.
- 4Pour in the batter and cook for 12-15 minutes until puffed and golden.
- 5Do not open the basket early or it may deflate.
- 6Serve at once with lemon and icing sugar.

- A hot tin and hot butter give the biggest rise.
- Serve immediately, as it settles quickly once out.
