Air Fryer Fennel

Sweet, caramelised fennel wedges with softened aniseed flavour and crisp, golden edges. The air fryer mellows its liquorice notes into something gently sweet, a sophisticated side for fish or roasts.
Ingredients
- 2 fennel bulbs, cut into wedges
- 1.5 tbsp olive oil
- 0.5 tsp fine salt
- 0.25 tsp black pepper
- 0.5 tsp fennel seeds
- 1 tsp lemon zest
Method
- 1Preheat the air fryer to 190°C (375°F).
- 2Trim the fennel and cut into 1.5 cm wedges, keeping the core to hold them together.
- 3Toss with oil, salt, pepper and fennel seeds.
- 4Air fry for 12-16 minutes, flipping halfway.
- 5Cook until tender and caramelised at the edges.
- 6Finish with lemon zest and serve.
Tips for the best results
- Keep some core attached so the wedges stay intact.
- Save the fronds to scatter over as a garnish.
- A shaving of parmesan over the hot fennel is delicious.
