A crunchy cinnamon-cornflake shell hiding a cold scoop of ice cream, crisped fast in the air fryer. The trick is deep-freezing the coated balls first, so the coating turns golden while the centre stays frozen and creamy.
Ingredients
- 4 large scoops vanilla ice cream
- 120 g (4 cups) cornflakes, crushed
- 2 tbsp caster sugar
- 1 tsp ground cinnamon
- 30 g (2 tbsp) melted butter
- 1 egg white, lightly beaten
- Honey and whipped cream, to serve
Method
- 1Scoop 4 firm balls of ice cream onto a tray and freeze hard for at least 2 hours.
- 2Toss the crushed cornflakes with sugar, cinnamon and melted butter.
- 3Working quickly, dip each frozen ball in egg white, roll in the cornflakes, then refreeze for 1 hour.
- 4Preheat the air fryer to 200°C/400°F and line the basket with parchment.
- 5Air fry the coated balls for 3-5 minutes until the coating is crisp and golden.
- 6Serve immediately drizzled with honey and topped with whipped cream.
