Air Fryer Fried Ice Cream

A crunchy cinnamon-cornflake shell hiding a cold scoop of ice cream, crisped fast in the air fryer. The trick is deep-freezing the coated balls first, so the coating turns golden while the centre stays frozen and creamy.

Ingredients

  • 4 large scoops vanilla ice cream
  • 120 g (4 cups) cornflakes, crushed
  • 2 tbsp caster sugar
  • 1 tsp ground cinnamon
  • 30 g (2 tbsp) melted butter
  • 1 egg white, lightly beaten
  • Honey and whipped cream, to serve

Method

  1. 1Scoop 4 firm balls of ice cream onto a tray and freeze hard for at least 2 hours.
  2. 2Toss the crushed cornflakes with sugar, cinnamon and melted butter.
  3. 3Working quickly, dip each frozen ball in egg white, roll in the cornflakes, then refreeze for 1 hour.
  4. 4Preheat the air fryer to 200°C/400°F and line the basket with parchment.
  5. 5Air fry the coated balls for 3-5 minutes until the coating is crisp and golden.
  6. 6Serve immediately drizzled with honey and topped with whipped cream.
