Air Fryer Gingerbread Cookies

Warmly spiced gingerbread cookies with a lovely snap and festive scent of ginger, cinnamon and treacle. The air fryer bakes them quickly in batches, perfect for decorating and filling the kitchen with a Christmassy aroma.

Ingredients

  • 175 g (1 1/3 cups) plain flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp bicarbonate of soda
  • 75 g (1/3 cup) butter
  • 75 g (1/3 cup) brown sugar
  • 2 tbsp golden syrup or treacle
  • 1 egg yolk

Method

  1. 1Rub the butter into the flour, spices and bicarbonate until it resembles breadcrumbs.
  2. 2Stir in the sugar, then mix in the syrup and egg yolk to form a firm dough.
  3. 3Roll out on a floured surface and cut into shapes.
  4. 4Preheat the air fryer to 160°C/320°F and line the basket with parchment.
  5. 5Air fry in batches for 7-9 minutes until firm and lightly darkened at the edges.
  6. 6Cool completely before decorating with icing.

  • Chill the dough for 30 minutes for cleaner cut shapes.
