Air Fryer Gingerbread Cookies

Warmly spiced gingerbread cookies with a lovely snap and festive scent of ginger, cinnamon and treacle. The air fryer bakes them quickly in batches, perfect for decorating and filling the kitchen with a Christmassy aroma.
Ingredients
- 175 g (1 1/3 cups) plain flour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
- 75 g (1/3 cup) butter
- 75 g (1/3 cup) brown sugar
- 2 tbsp golden syrup or treacle
- 1 egg yolk
Method
- 1Rub the butter into the flour, spices and bicarbonate until it resembles breadcrumbs.
- 2Stir in the sugar, then mix in the syrup and egg yolk to form a firm dough.
- 3Roll out on a floured surface and cut into shapes.
- 4Preheat the air fryer to 160°C/320°F and line the basket with parchment.
- 5Air fry in batches for 7-9 minutes until firm and lightly darkened at the edges.
- 6Cool completely before decorating with icing.
Tips for the best results
- Chill the dough for 30 minutes for cleaner cut shapes.
- Bake a little less for chewy cookies, a little more for a crisp snap.
