Updated 7 September 2026

Creamy ham and cheese croquettes get a crisp golden shell in the air fryer without a vat of oil. The molten béchamel centre studded with ham stays luscious inside the crunchy breadcrumb coat.

Ingredients

  • 50 g butter
  • 50 g plain flour
  • 400 ml milk
  • 150 g cooked ham, finely chopped
  • 80 g grated cheese
  • 2 eggs, beaten
  • 100 g breadcrumbs
  • Oil spray

Method

  1. 1Make a thick béchamel with the butter, flour and milk, then stir in ham and cheese; chill until firm.
  2. 2Shape the cold mixture into small logs.
  3. 3Coat each in flour, then egg, then breadcrumbs.
  4. 4Preheat the air fryer to 200°C/400°F and spray the basket.
  5. 5Cook 10-12 minutes, turning gently halfway and spraying with oil, until golden and crisp.
  6. 6Rest a minute so the filling settles, then serve hot.

Tips for the best results

  • Chill the mixture thoroughly or the croquettes will burst.
  • A double breadcrumb coat gives extra crunch and helps contain the filling.
