Updated 7 September 2026
Creamy ham and cheese croquettes get a crisp golden shell in the air fryer without a vat of oil. The molten béchamel centre studded with ham stays luscious inside the crunchy breadcrumb coat.
Ingredients
- 50 g butter
- 50 g plain flour
- 400 ml milk
- 150 g cooked ham, finely chopped
- 80 g grated cheese
- 2 eggs, beaten
- 100 g breadcrumbs
- Oil spray
Method
- 1Make a thick béchamel with the butter, flour and milk, then stir in ham and cheese; chill until firm.
- 2Shape the cold mixture into small logs.
- 3Coat each in flour, then egg, then breadcrumbs.
- 4Preheat the air fryer to 200°C/400°F and spray the basket.
- 5Cook 10-12 minutes, turning gently halfway and spraying with oil, until golden and crisp.
- 6Rest a minute so the filling settles, then serve hot.
Tips for the best results
- Chill the mixture thoroughly or the croquettes will burst.
- A double breadcrumb coat gives extra crunch and helps contain the filling.
