A sticky honey-glazed ham is the centrepiece of any holiday table, and a small joint fits neatly in the air fryer. The circulating heat lacquers the glaze into a glossy, caramelised crust in a fraction of the oven time.
Ingredients
- 1.5 kg cooked boneless gammon joint
- 4 tbsp honey
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tsp ground cloves
- Whole cloves, to stud
Method
- 1Score the fat in a diamond pattern and stud with whole cloves.
- 2Mix honey, sugar, mustard and ground cloves into a glaze.
- 3Preheat the air fryer to 160°C/320°F.
- 4Brush the joint with glaze and cook 25-35 minutes, glazing again every 10 minutes.
- 5Warm through until the centre reaches 60°C/140°F and the surface is caramelised.
