Updated 7 September 2026

A sticky honey-glazed ham is the centrepiece of any holiday table, and a small joint fits neatly in the air fryer. The circulating heat lacquers the glaze into a glossy, caramelised crust in a fraction of the oven time.

Ingredients

  • 1.5 kg cooked boneless gammon joint
  • 4 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp ground cloves
  • Whole cloves, to stud

Method

  1. 1Score the fat in a diamond pattern and stud with whole cloves.
  2. 2Mix honey, sugar, mustard and ground cloves into a glaze.
  3. 3Preheat the air fryer to 160°C/320°F.
  4. 4Brush the joint with glaze and cook 25-35 minutes, glazing again every 10 minutes.
  5. 5Warm through until the centre reaches 60°C/140°F and the surface is caramelised.
  6. 6Rest 10 minutes before carving.

Tips for the best results

  • Use a pre-cooked joint so you only need to heat and glaze.
  • Line the basket with foil to catch sticky drips and ease cleaning.
