Air Fryer Honey Walnut Shrimp

A lighter take on the takeaway favourite: crisp battered prawns in a creamy honey glaze with candied walnuts. The air fryer keeps the coating crunchy while cutting the deep-fried grease.

Ingredients

  • 450 g large raw prawns, peeled
  • 60 g cornflour
  • 2 egg whites, whisked
  • 100 g walnut halves
  • 3 tbsp honey
  • 3 tbsp mayonnaise
  • 1 tbsp sweetened condensed milk
  • 1 tsp lemon juice
  • Oil spray

Method

  1. 1Toss the walnuts with 1 tbsp honey and air fry at 160°C/320°F for 4 minutes; set aside to crisp.
  2. 2Preheat the air fryer to 200°C/400°F for 3 minutes.
  3. 3Dip prawns in whisked egg white, then coat in cornflour and mist with oil.
  4. 4Air fry for 8-10 minutes, shaking halfway, until crisp and golden.
  5. 5Whisk the mayonnaise, remaining honey, condensed milk and lemon juice into a glaze.
  6. 6Toss the hot prawns in the glaze and top with candied walnuts.
