Bold Caribbean jerk marinade of allspice, thyme and scotch bonnet clings to smoky, tender chicken. The air fryer chars the skin like a grill, delivering that fiery, aromatic Jamaican flavour with a fraction of the effort.

Ingredients

  • 8 chicken thighs, bone-in
  • 2 tbsp jerk seasoning
  • 1 scotch bonnet, deseeded and minced
  • 3 spring onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp dried thyme
  • 2 tbsp olive oil

Method

  1. 1Blend the jerk seasoning, scotch bonnet, spring onions, soy, sugar, lime, thyme and oil into a paste.
  2. 2Coat the chicken and marinate for at least 2 hours.
  3. 3Preheat the air fryer to 190°C (375°F).
  4. 4Cook the thighs skin-side up for 20-25 minutes, flipping halfway.
  5. 5Check the thickest part reaches 74°C (165°F).
  6. 6Rest briefly and serve with rice and peas.
