Bold Caribbean jerk marinade of allspice, thyme and scotch bonnet clings to smoky, tender chicken. The air fryer chars the skin like a grill, delivering that fiery, aromatic Jamaican flavour with a fraction of the effort.
Ingredients
- 8 chicken thighs, bone-in
- 2 tbsp jerk seasoning
- 1 scotch bonnet, deseeded and minced
- 3 spring onions, chopped
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp lime juice
- 1 tsp dried thyme
- 2 tbsp olive oil
Method
- 1Blend the jerk seasoning, scotch bonnet, spring onions, soy, sugar, lime, thyme and oil into a paste.
- 2Coat the chicken and marinate for at least 2 hours.
- 3Preheat the air fryer to 190°C (375°F).
- 4Cook the thighs skin-side up for 20-25 minutes, flipping halfway.
- 5Check the thickest part reaches 74°C (165°F).
- 6Rest briefly and serve with rice and peas.
