Air Fryer Korean Beef Bulgogi

Bulgogi is thinly sliced beef in a sweet, savoury soy and pear marinade, and it caramelises brilliantly in the air fryer. You get sticky, charred edges and tender meat in minutes, ideal over steamed rice with a scatter of spring onion.
Ingredients
- 500 g thinly sliced beef sirloin
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 3 garlic cloves, minced
- ½ pear, grated
- 1 tbsp grated ginger
- 2 spring onions, sliced
Method
- 1Mix the soy, sugar, sesame oil, garlic, pear and ginger into a marinade.
- 2Add the sliced beef and marinate for at least 30 minutes.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Spread the beef in the basket and cook for 8-12 minutes, tossing halfway.
- 5Cook until caramelised at the edges and cooked through to 71°C (160°F).
- 6Scatter with spring onions and serve over rice.
Tips for the best results
- Grated pear is the traditional tenderiser and adds a subtle fruity sweetness.
- Spread the beef out rather than piling it up so the edges catch and caramelise.
