Air Fryer Lamb Meatballs

Tender, herby lamb meatballs cook evenly in the air fryer with a lovely browned crust. Warm Middle Eastern spices and fresh herbs make them wonderful over couscous or in a tomato sauce, with far less mess than pan-frying.
Ingredients
- 500 g minced lamb
- 1 egg
- 4 tbsp breadcrumbs
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- Small handful of mint, chopped
- 1 tsp salt
Method
- 1Combine the lamb, egg, breadcrumbs, garlic, spices, mint and salt.
- 2Roll into even meatballs about 3 cm across.
- 3Preheat the air fryer to 190°C (375°F) for 3 minutes.
- 4Cook for 10-14 minutes, shaking the basket every 8 minutes.
- 5Check they have reached 71°C (160°F) at the centre.
- 6Serve over couscous or in a warm tomato sauce.
Tips for the best results
- Wet hands make rolling smooth, even meatballs much easier.
- A splash of cold water in the mix keeps the meatballs juicy.
