Air Fryer Lamb Shawarma

Spiced lamb shawarma crisps beautifully at the edges in the air fryer, mimicking the char of the spit. Warm cumin, cinnamon and coriander perfume the tender strips, ready to wrap in flatbread with tahini, salad and pickles.
Ingredients
- 600 g lamb leg, thinly sliced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cinnamon
- ½ tsp allspice
- 2 garlic cloves, minced
Method
- 1Whisk the oil, lemon juice, spices and garlic with a pinch of salt into a marinade.
- 2Coat the lamb strips and marinate for at least 1 hour.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Spread the lamb in the basket and cook for 12-16 minutes, tossing halfway.
- 5Cook until crisp at the edges and the lamb reaches 63°C (145°F).
- 6Serve in warm flatbreads with tahini sauce and salad.

- Slicing the lamb thinly means more edges to crisp and a quicker cook.
- Marinate overnight for the deepest, most authentic flavour.
