Zingy, silky lemon curd set over a buttery shortbread base, dusted with icing sugar. The air fryer bakes both the crisp base and the tangy topping to a perfect set, balancing sweet and sharp in every square.
Ingredients
- 120 g (1 cup) plain flour
- 60 g (1/4 cup) butter
- 30 g (1/4 cup) icing sugar, plus extra to dust
- 2 eggs
- 150 g (3/4 cup) caster sugar
- 2 tbsp plain flour
- 80 ml (1/3 cup) lemon juice
- 1 tbsp lemon zest
Method
- 1Rub the flour, butter and icing sugar to a crumb, then press into a lined tin to form the base.
- 2Preheat the air fryer to 160°C/320°F and bake the base for 10 minutes until pale golden.
- 3Whisk the eggs, caster sugar, flour, lemon juice and zest into a smooth filling.
- 4Pour the filling over the warm base.
- 5Bake for a further 12-17 minutes until the topping is just set with no wobble.
- 6Cool completely, chill, then dust with icing sugar and cut into bars.
