Air Fryer Lentil Meatballs

Hearty meatballs built from lentils, mushrooms and herbs, crisp outside and tender within. The air fryer firms them into sturdy rounds without frying, ready to nestle into pasta, subs or a bowl of marinara.
Ingredients
- 250g cooked green lentils
- 150g mushrooms, finely chopped
- 1/2 onion, diced
- 2 cloves garlic, minced
- 6 tbsp breadcrumbs
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Spray oil
Method
- 1Pulse the lentils to a coarse paste, keeping some texture.
- 2Mix with mushrooms, onion, garlic, breadcrumbs, tomato paste and herbs.
- 3Roll into small balls and chill for 10 minutes.
- 4Preheat the air fryer to 190°C (375°F).
- 5Mist with oil and air fry for 12-16 minutes, tossing halfway, until firm and browned.
- 6Simmer briefly in marinara before serving over pasta.
Tips for the best results
- Chill the mixture so the balls hold together.
- Cook the mushrooms down first if they seem very wet.
- Add more breadcrumbs if the mix is too soft to roll.
