Delicate, shell-shaped French madeleines with a signature buttery hump and light, spongy crumb. The air fryer bakes them quickly to a golden edge, so you get that fresh-from-the-café texture with barely any effort.

Ingredients

  • 2 eggs
  • 80 g (1/3 cup) caster sugar
  • 80 g (2/3 cup) plain flour
  • 1/2 tsp baking powder
  • 80 g (1/3 cup) melted butter, cooled
  • 1 tsp lemon zest
  • 1/2 tsp vanilla extract

Method

  1. 1Whisk the eggs and sugar until pale and thick, then stir in the lemon zest and vanilla.
  2. 2Fold in the flour and baking powder, then gently fold in the cooled melted butter.
  3. 3Chill the batter for at least 30 minutes to help the classic hump form.
  4. 4Spoon into a greased madeleine mould that fits your air fryer.
