Air Fryer Madeleines

Delicate, shell-shaped French madeleines with a signature buttery hump and light, spongy crumb. The air fryer bakes them quickly to a golden edge, so you get that fresh-from-the-café texture with barely any effort.
Ingredients
- 2 eggs
- 80 g (1/3 cup) caster sugar
- 80 g (2/3 cup) plain flour
- 1/2 tsp baking powder
- 80 g (1/3 cup) melted butter, cooled
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
Method
- 1Whisk the eggs and sugar until pale and thick, then stir in the lemon zest and vanilla.
- 2Fold in the flour and baking powder, then gently fold in the cooled melted butter.
- 3Chill the batter for at least 30 minutes to help the classic hump form.
- 4Spoon into a greased madeleine mould that fits your air fryer.
- 5Preheat the air fryer to 175°C/350°F, then bake for 8-10 minutes until golden and springy.
- 6Turn out immediately and dust with icing sugar.
