Individual creamy cheesecakes with a crunchy biscuit base, baked in cupcake cases for perfect portion control. The air fryer sets them quickly and evenly, so each one has a smooth top and a rich, velvety centre.
Ingredients
- 90 g (6) digestive biscuits, crushed
- 40 g (3 tbsp) melted butter
- 250 g (9 oz) cream cheese
- 60 g (1/4 cup) caster sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp soured cream
Method
- 1Mix the crushed biscuits with melted butter and press into the base of 6 silicone or foil cupcake cases.
- 2Beat the cream cheese and sugar until smooth, then beat in the egg.
- 3Stir in the vanilla and soured cream until just combined.
- 4Divide the filling between the cases over the bases.
- 5Preheat the air fryer to 150°C/300°F, then bake for 12-15 minutes until just set with a slight wobble.
- 6Cool, then chill for at least 3 hours before topping and serving.

- Use sturdy silicone cases so they hold shape and lift out cleanly.
