Individual creamy cheesecakes with a crunchy biscuit base, baked in cupcake cases for perfect portion control. The air fryer sets them quickly and evenly, so each one has a smooth top and a rich, velvety centre.

Ingredients

  • 90 g (6) digestive biscuits, crushed
  • 40 g (3 tbsp) melted butter
  • 250 g (9 oz) cream cheese
  • 60 g (1/4 cup) caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp soured cream

Method

  1. 1Mix the crushed biscuits with melted butter and press into the base of 6 silicone or foil cupcake cases.
  2. 2Beat the cream cheese and sugar until smooth, then beat in the egg.
  3. 3Stir in the vanilla and soured cream until just combined.
  4. 4Divide the filling between the cases over the bases.
  5. 5Preheat the air fryer to 150°C/300°F, then bake for 12-15 minutes until just set with a slight wobble.
