Air Fryer Mongolian Pork

Sticky, savoury Mongolian pork gives all the flavour of the takeaway with crisp air-fried strips tossed in a glossy soy-ginger sauce. The air fryer crisps the cornflour-coated pork so it clings to the sauce.
Ingredients
- 500 g pork loin, sliced into strips
- 3 tbsp cornflour
- Oil spray
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tsp grated ginger
- 2 garlic cloves, minced
- 3 spring onions, cut into lengths
Method
- 1Toss the pork strips in cornflour to coat.
- 2Preheat the air fryer to 200°C/400°F and spray the basket.
- 3Cook the pork 11-13 minutes, tossing halfway and spraying with oil, until crisp and at 63°C/145°F.
- 4Meanwhile simmer soy, sugar, ginger and garlic until syrupy.
- 5Toss the crisp pork and spring onions through the sauce.
- 6Serve immediately over rice.
Tips for the best results
- Coat the pork in cornflour just before cooking for the crispest result.
- Add the spring onions at the end so they stay fresh and green.
