Crunchy breaded mushroom fries with juicy centres, a moreish veggie appetiser. The air fryer crisps the panko coating without deep-frying, so they stay light while the mushrooms turn meaty and tender inside.
Ingredients
- 300 g oyster or large mushrooms, torn into strips
- 60 g panko breadcrumbs
- 30 g grated parmesan
- 40 g plain flour
- 0.5 tsp garlic powder
- 0.5 tsp fine salt
- 1 egg, beaten
- Olive oil spray
Method
- 1Preheat the air fryer to 200°C (400°F).
- 2Set up flour, beaten egg, and a panko-parmesan-garlic-salt mix in three bowls.
- 3Coat each mushroom strip in flour, then egg, then panko.
