Crunchy breaded mushroom fries with juicy centres, a moreish veggie appetiser. The air fryer crisps the panko coating without deep-frying, so they stay light while the mushrooms turn meaty and tender inside.

Ingredients

  • 300 g oyster or large mushrooms, torn into strips
  • 60 g panko breadcrumbs
  • 30 g grated parmesan
  • 40 g plain flour
  • 0.5 tsp garlic powder
  • 0.5 tsp fine salt
  • 1 egg, beaten
  • Olive oil spray

Method

  1. 1Preheat the air fryer to 200°C (400°F).
  2. 2Set up flour, beaten egg, and a panko-parmesan-garlic-salt mix in three bowls.
  3. 3Coat each mushroom strip in flour, then egg, then panko.
  4. 4Arrange in a single layer and spritz with oil.
  5. 5Air fry for 10-12 minutes, flipping halfway, until golden and crisp.
  6. 6Serve hot with a dipping sauce.

Tips for the best results

  • Tear rather than slice for a meatier texture.
  • Press the crumbs on firmly so they stick.
