Crisp, caramelised French palmiers with their pretty heart shape and delicate layers of sugar and pastry. The air fryer bakes them to a glassy, golden crunch, making an elegant treat from just two ingredients.
Ingredients
- 1 sheet ready-rolled puff pastry
- 80 g (1/3 cup) caster sugar
- 1/2 tsp ground cinnamon, optional
- 1 tbsp melted butter
- Pinch of salt
Method
- 1Sprinkle the work surface with half the sugar and lay the pastry on top.
- 2Brush with melted butter and scatter over the remaining sugar and cinnamon.
- 3Roll both long sides inwards to meet in the middle, then chill for 15 minutes.
- 4Slice into 1 cm pieces and lay flat on lined parchment.
- 5Preheat the air fryer to 180°C/360°F, then bake for 8-11 minutes, flipping halfway, until caramelised and golden.
- 6Cool on a rack so they crisp up.
Tips for the best results
- Chilling before slicing keeps the pretty heart shape.
- Give them room to spread and flip carefully to caramelise both sides.
