Cubes of paneer marinated in spiced yoghurt and threaded with peppers and onion, charred in the air fryer. The high heat blisters the marinade like a tandoor, giving smoky, tender skewers without lighting the grill.

Ingredients

  • 250g paneer, cubed
  • 100g plain yoghurt
  • 1 tbsp ginger garlic paste
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp chilli powder
  • 1 pepper, chunked
  • 1 red onion, chunked
  • 1 tbsp oil

Method

  1. 1Mix the yoghurt, ginger garlic paste, spices and oil into a marinade.
  2. 2Coat the paneer and vegetables and rest for 15 minutes.
  3. 3Thread paneer, pepper and onion alternately onto skewers.
  4. 4Preheat the air fryer to 200°C (400°F).
  5. 5Air fry for 10-13 minutes, flipping halfway, until charred at the edges.
  6. 6Serve with mint chutney and lemon.

Tips for the best results

  • Do not over-marinate paneer or it can turn soft.
  • Cut the peppers and onion to match the paneer size.
  • A squeeze of lemon at the end lifts the spices.
