Air Fryer Pop Tarts

Homemade pastry pockets filled with jam and topped with a simple icing, far better than the shop-bought kind. The air fryer bakes the pastry crisp and flaky in under ten minutes.
Ingredients
- 1 sheet shortcrust pastry
- 4 tbsp jam
- 1 egg, beaten
- 80 g icing sugar
- 1 tbsp water
- Sprinkles to decorate
Method
- 1Cut the pastry into equal rectangles, two per tart.
- 2Spoon jam onto half the rectangles, leaving a border.
- 3Brush the edges with egg, top with a second rectangle and crimp with a fork.
- 4Preheat the air fryer to 180°C/360°F and brush the tops with egg.
- 5Cook for 4 minutes, flip, then 4-6 minutes until golden.
- 6Cool, then drizzle with icing mixed from sugar and water, and add sprinkles.
Tips for the best results
- Do not overfill or the jam will leak out.
- Prick the tops once or twice to let steam escape.
