Sticky, candy-like pork belly burnt ends are a barbecue treat, and the air fryer renders the cubes crisp and caramelised without a smoker. Tossed in a sweet, sticky glaze, they are impossible to stop eating.

Ingredients

  • 700 g pork belly, cut into 3 cm cubes
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper
  • 4 tbsp barbecue sauce
  • 1 tbsp honey

Method

  1. 1Toss the pork belly cubes with sugar, paprika, garlic powder, salt and pepper.
  2. 2Preheat the air fryer to 190°C/375°F.
  3. 3Cook the cubes 20-25 minutes, tossing halfway, until crisp and rendered.
  4. 4Mix the barbecue sauce and honey, then toss the cubes through it.
  5. 5Return to the basket for 3 minutes to set the sticky glaze.
  6. 6Check they are tender at around 90°C/195°F and serve hot.
