Crispy-bottomed pork dumplings come out golden and crunchy in the air fryer, no fiddly pan-frying required. A quick mist of oil crisps the wrappers while the seasoned pork filling stays juicy inside.

  • 300 g pork mince
  • 2 spring onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Method

  1. 1Mix the mince, spring onions, soy, sesame oil, ginger and garlic.
  2. 2Spoon a little filling into each wrapper, wet the edges and pleat to seal.
  3. 3Preheat the air fryer to 180°C/360°F and lightly spray the basket.
  4. 4Arrange the dumplings without touching and spray the tops with oil.
  5. 5Cook 8-10 minutes, tossing gently halfway, until golden and crisp.
  6. 6Ensure the filling reaches 71°C/160°F, then serve with dipping sauce.

Tips for the best results

  • Spray the wrappers well or they can dry out and crack.
  • Freeze uncooked dumplings and air fry from frozen, adding a couple of minutes.
