Air Fryer Pork Satay

Fragrant pork satay skewers char and caramelise fast in the air fryer, served with a creamy peanut sauce. The marinade of lemongrass and spices keeps the strips tender and deeply flavoured.
Ingredients
- 500 g pork loin, cut into strips
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 lemongrass stalk, minced
- 1 tbsp oil
- Peanut sauce, to serve
Method
- 1Mix soy, sugar, turmeric, coriander, lemongrass and oil, then toss with the pork and marinate 1 hour.
- 2Thread the strips onto soaked skewers in a concertina.
- 3Preheat the air fryer to 200°C/400°F.
- 4Cook 9-11 minutes, flipping halfway, until charred at the edges.
- 5Check the pork reaches 63°C/145°F.
- 6Serve hot with peanut sauce for dipping.

- Slice the pork thinly across the grain for tender satay.
