Ready in about 31 minutes.
Updated 7 September 2026
Classic Austrian-style pork schnitzel turns out shatteringly crisp in the air fryer without a pan of oil. The circulating heat sets the breadcrumb coat golden in minutes while keeping the pounded pork juicy inside.
Ingredients
- 4 boneless pork loin steaks (about 500 g)
- 100 g plain flour
- 2 eggs, beaten
- 150 g dried breadcrumbs
- 1 tsp paprika
- Salt and black pepper
- Oil spray
- Lemon wedges, to serve
Method
- 1Place pork between cling film and pound to about 5 mm thick, then season.
- 2Set up three bowls: flour, beaten egg, and breadcrumbs mixed with paprika.
- 3Coat each steak in flour, then egg, then press firmly into the breadcrumbs.
- 4Preheat the air fryer to 200°C/400°F and spray the basket.
- 5Arrange the schnitzels in a single layer, spray the tops with oil, and cook 10-12 minutes, flipping halfway, until golden and crisp.
- 6Check the internal temperature reaches 63°C/145°F, then rest 3 minutes and serve with lemon.
Tips for the best results
- Do not overlap the schnitzels or the coating will steam rather than crisp.
- Press the crumbs on firmly so they cling during cooking.
