Creamy mashed-potato croquettes with a crunchy golden crumb, no deep-frying needed. The air fryer crisps the breadcrumb shell while keeping the cheesy centre soft and comforting.
Ingredients
- 600 g floury potatoes, peeled
- 50 g grated Parmesan
- 1 egg yolk
- 2 tbsp chopped parsley
- Salt and pepper
- 2 eggs, beaten
- 100 g panko breadcrumbs
- 50 g plain flour
- Spray oil
Method
- 1Boil the potatoes until tender, drain well and mash until smooth. Cool slightly.
- 2Mix in Parmesan, egg yolk, parsley, salt and pepper, then shape into small cylinders.
- 3Roll each in flour, then beaten egg, then panko to coat fully.
- 4Preheat the air fryer to 200°C/400°F and mist the croquettes with oil.
- 5Cook in a single layer for 12-15 minutes, flipping halfway, until deep golden and crisp.
- 6Serve hot with garlic mayo or marinara.
Tips for the best results
- Chill the shaped croquettes for 20 minutes so they hold together while cooking.
- Press the panko on firmly for an even, crunchy crust.
