A rich, buttery pound cake with a tight, moist crumb and a lightly crisp golden crust from the air fryer. Classic vanilla flavour makes it perfect on its own or with berries and cream for an effortless afternoon treat.
Ingredients
- 175 g (3/4 cup) softened butter
- 175 g (3/4 cup) caster sugar
- 3 eggs
- 175 g (1 1/3 cups) plain flour
- 1 tsp baking powder
- 2 tsp vanilla extract
- 2 tbsp milk
- Pinch of salt
Method
- 1Cream the butter and sugar until pale and fluffy.
- 2Beat in the eggs one at a time, then stir in the vanilla.
- 3Fold in the flour, baking powder and salt, loosening with the milk to a soft dropping consistency.
- 4Spoon into a greased, lined loaf tin that fits your air fryer.
- 5Preheat the air fryer to 160°C/320°F, then bake for 30-35 minutes until a skewer comes out clean.
- 6Cover with foil if the top darkens too quickly, then cool before slicing.

- Room-temperature butter and eggs give the lightest crumb.
