A rich, buttery pound cake with a tight, moist crumb and a lightly crisp golden crust from the air fryer. Classic vanilla flavour makes it perfect on its own or with berries and cream for an effortless afternoon treat.

Ingredients

  • 175 g (3/4 cup) softened butter
  • 175 g (3/4 cup) caster sugar
  • 3 eggs
  • 175 g (1 1/3 cups) plain flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 2 tbsp milk
  • Pinch of salt

Method

  1. 1Cream the butter and sugar until pale and fluffy.
  2. 2Beat in the eggs one at a time, then stir in the vanilla.
  3. 3Fold in the flour, baking powder and salt, loosening with the milk to a soft dropping consistency.
  4. 4Spoon into a greased, lined loaf tin that fits your air fryer.
  5. 5Preheat the air fryer to 160°C/320°F, then bake for 30-35 minutes until a skewer comes out clean.
