Air Fryer Pumpkin Bread

A moist, spiced pumpkin loaf fragrant with cinnamon, nutmeg and cloves, baked to a tender crumb in the air fryer. It is the cosy autumn bake made easy, with a lovely domed top and warm, comforting flavour throughout.
Ingredients
- 200 g (1 1/2 cups) plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 2 tsp pumpkin spice mix
- 200 g (3/4 cup) pumpkin puree
- 150 g (3/4 cup) brown sugar
- 2 eggs
- 80 ml (1/3 cup) vegetable oil
- 1 tsp vanilla extract
Method
- 1Whisk the flour, baking powder, bicarbonate and pumpkin spice in a bowl.
- 2In another bowl, mix the pumpkin puree, sugar, eggs, oil and vanilla until smooth.
- 3Fold the wet into the dry ingredients until just combined.
- 4Pour into a greased, lined loaf tin that fits your air fryer.
- 5Preheat the air fryer to 160°C/320°F, then bake for 30-35 minutes until a skewer comes out clean.
- 6Cover with foil if the top browns too fast, then cool before slicing.

- Use pure pumpkin puree, not sweetened pie filling.
- Stir a handful of chocolate chips or pecans into the batter for extra texture.
