Air Fryer Ratatouille

A rustic air fryer ratatouille of aubergine, courgette, peppers and tomato in a herby, garlicky sauce. The air fryer roasts the vegetables until soft and caramelised, deepening this classic Provençal side in half the usual time.
Ingredients
- 1 aubergine, cubed
- 1 courgette, cubed
- 1 red pepper, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 200 g cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tsp dried herbes de Provence
- 0.5 tsp fine salt
Method
- 1Preheat the air fryer to 180°C (360°F).
- 2Toss all the vegetables with oil, garlic, herbs and salt.
- 3Tip into an air fryer dish or lined basket.
- 4Air fry for 18-22 minutes, tossing halfway.
- 5Cook until everything is soft and lightly caramelised.
- 6Adjust the seasoning and serve warm or at room temperature.
Tips for the best results
- Cut the vegetables to a similar size for even cooking.
- Salt the aubergine first to draw out bitterness if you like.
- Stir through fresh basil just before serving.
