Updated 7 September 2026
Classic buttery shortbread with a crisp, sandy crumb and just three main ingredients. The gentle heat of the air fryer bakes it to a delicate pale gold, giving that melt-in-the-mouth Scottish biscuit texture.
Ingredients
- 200 g (1 1/2 cups) plain flour
- 130 g (2/3 cup) softened butter
- 65 g (1/3 cup) caster sugar
- Pinch of salt
- Extra caster sugar, for sprinkling
Method
- 1Beat the butter and sugar until just combined but not fluffy.
- 2Work in the flour and salt to form a firm, slightly crumbly dough.
- 3Press evenly into a lined air-fryer-safe tin and prick all over with a fork.
- 4Preheat the air fryer to 150°C/300°F.
- 5Bake for 18-22 minutes until pale golden and firm at the edges.
- 6Sprinkle with caster sugar, mark into fingers while warm, then cool before cutting.
Tips for the best results
- Do not overwork the dough or the shortbread will be tough.
- Chilling the pressed dough for 15 minutes helps it hold a crisp edge.
