Air Fryer Shrimp Boil

All the flavours of a Louisiana shrimp boil, made without a stockpot: prawns, smoked sausage, corn and baby potatoes in a buttery Old Bay toss. The air fryer keeps everything juicy with a lightly roasted edge.

Ingredients

  • 400 g raw prawns, peeled
  • 200 g smoked sausage, sliced
  • 2 corn cobs, cut into rounds
  • 300 g baby potatoes, halved
  • 40 g butter, melted
  • 1 tbsp Old Bay seasoning
  • 3 garlic cloves, minced
  • Parsley, to garnish

Method

  1. 1Parboil the potatoes for 6 minutes, then drain.
  2. 2Toss the potatoes, corn and sausage with half the butter, garlic and Old Bay.
  3. 3Preheat the air fryer to 200°C/400°F and cook the vegetables and sausage for 10 minutes, tossing halfway.
  4. 4Toss the prawns with the remaining butter and seasoning.
  5. 5Add the prawns and air fry for 5-6 minutes more until pink.
  6. 6Scatter with parsley and serve straight from the basket.

Tips for the best results

  • Parboiling the potatoes ensures they finish tender at the same time as the prawns.
  • Andouille or chorizo both work well in place of smoked sausage.
