All the flavours of a Louisiana shrimp boil, made without a stockpot: prawns, smoked sausage, corn and baby potatoes in a buttery Old Bay toss. The air fryer keeps everything juicy with a lightly roasted edge.
Ingredients
- 400 g raw prawns, peeled
- 200 g smoked sausage, sliced
- 2 corn cobs, cut into rounds
- 300 g baby potatoes, halved
- 40 g butter, melted
- 1 tbsp Old Bay seasoning
- 3 garlic cloves, minced
- Parsley, to garnish
Method
- 1Parboil the potatoes for 6 minutes, then drain.
- 2Toss the potatoes, corn and sausage with half the butter, garlic and Old Bay.
- 3Preheat the air fryer to 200°C/400°F and cook the vegetables and sausage for 10 minutes, tossing halfway.
- 4Toss the prawns with the remaining butter and seasoning.
- 5Add the prawns and air fry for 5-6 minutes more until pink.
- 6Scatter with parsley and serve straight from the basket.
Tips for the best results
- Parboiling the potatoes ensures they finish tender at the same time as the prawns.
- Andouille or chorizo both work well in place of smoked sausage.
