Air Fryer Shrimp Scampi

Classic garlicky, buttery scampi with white wine and lemon, made in the air fryer and ready for tossing through pasta. Quick, elegant and deeply savoury.
Ingredients
- 500 g large raw prawns, peeled
- 40 g butter, melted
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 2 tbsp dry white wine
- Juice of 1/2 lemon
- 1/4 tsp chilli flakes
- Parsley and grated parmesan, to serve
Method
- 1Preheat the air fryer to 200°C/400°F for 3 minutes.
- 2Mix the prawns with butter, oil, garlic, wine, chilli flakes and a little salt in a heatproof dish.
- 3Place the dish in the basket so the sauce stays with the prawns.
- 4Air fry for 6-8 minutes, tossing halfway, until pink and opaque.
- 5Stir through the lemon juice and parsley.
- 6Toss with cooked linguine and parmesan to serve.
Tips for the best results
- Use a metal dish to catch every drop of the garlic butter sauce.
- Reserve a splash of pasta water to loosen the sauce when tossing.
