Air Fryer Spanakopita

Greek spinach and feta triangles wrapped in shatteringly crisp filo. The air fryer bakes the layered pastry beautifully golden and flaky with just a brush of oil, no soggy bottoms in sight.
Ingredients
- 6 sheets filo pastry
- 300 g spinach, cooked and squeezed dry
- 150 g feta, crumbled
- 2 spring onions, chopped
- 1 egg
- 1 tsp dried dill
- Salt and pepper
- 2 tbsp olive oil for brushing
Method
- 1Mix spinach, feta, spring onions, egg, dill, salt and pepper.
- 2Brush a filo sheet with oil, layer a second on top and cut into long strips.
- 3Place filling at one end and fold into triangles, flag-style, sealing the last edge with oil.
- 4Preheat the air fryer to 180°C/360°F.
- 5Brush the triangles with oil and arrange in a single layer.
- 6Cook for 10-12 minutes, flipping halfway, until golden and crisp.
Tips for the best results
- Squeeze the spinach really dry to avoid a soggy filling.
- Keep spare filo under a damp towel so it does not dry and crack.
