Fluffy baked sweet potatoes split and loaded with spiced black beans, corn and avocado. The air fryer bakes the skins crisp and the flesh soft, giving a wholesome, filling meal that needs almost no hands-on work.
Ingredients
- 4 sweet potatoes
- 1 tin (400g) black beans, drained
- 150g sweetcorn
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 avocado, diced
- 2 spring onions, sliced
- Lime wedges
- Spray oil
Method
- 1Prick the sweet potatoes and rub with a little oil.
- 2Preheat the air fryer to 200°C (400°F).
- 3Air fry for 35-45 minutes until the skins are crisp and the centres soft.
- 4Warm the beans and corn with cumin and paprika.
- 5Split each potato and fluff the flesh, then load with the bean mix.
- 6Top with avocado, spring onion and a squeeze of lime.
