Air Fryer T-Bone Steak

A T-bone gives you two steaks in one, with tender fillet on one side of the bone and rich sirloin on the other. The air fryer handles this hefty cut with ease, delivering an even crust and a juicy, pink centre.
Ingredients
- 2 T-bone steaks, about 350 g each
- 1 tbsp olive oil
- 1½ tsp flaky salt
- ¾ tsp black pepper
- 1 tsp garlic granules
- 2 tbsp butter
Method
- 1Bring the steaks to room temperature and pat them completely dry.
- 2Rub with oil and season on both sides with salt, pepper and garlic granules.
- 3Preheat the air fryer to 200°C (400°F) for 3 minutes.
- 4Cook one T-bone at a time for 12-16 minutes, flipping halfway.
- 5Probe the thicker sirloin side and pull at 63°C (145°F) for medium.
- 6Rest for 5-8 minutes with a knob of butter melting on top.
Tips for the best results
- The fillet side cooks faster than the sirloin, so position the fillet away from the hottest airflow if you can.
- Cook one steak at a time for the best crust; crowding traps steam and softens the surface.
